Chef Paul Prudhomme, the man who single-handedly brought Cajun cookin' to the attention of the world put on his wings this past week. I discovered Chef Pauls Cajun Magic seasoning blends when I was living in California back in the late 80's/early 90's. I bought up huge supplies every time I was in the States, to bring home and stock up my cupboard.
I've learned to blend my own since then.
