Jo's Gramma's Potato Salad: Submitted by Parb

20 small or bite size pieces cooked Potatoes
½ very thinly sliced Red Onion
¼ Cup very finely chopped (preferably) fresh Spearmint
-any mint will do
-salt/pepper to taste.

-mix in equal parts (or to taste)-just to glaze the potatoes
Extra Light Olive Oil and White Vinegar
Heavier oil, then use 2 parts WV to OO

-mix in liquid just before serving
Light and refreshing.
