Here's my take on the Whaler's Wharf Ceasar. They used to make it right in front of you. It was delish.

1/4 Olive Oil (we use Extra Light)
1/2 cup grated Parmesaan Cheese
1 whole egg
1 tablespoon reallemon juice (fresh lemon is of course more lemony!)
1/4 teaspoon black pepper
6-8 cloves garlic finely chopped

Mix the above with a mixer until creamy-refrigerate

Bacon, cooked crispy, croutons
(I cook mine with the bacon)
drain on paper towels

Just before serving and tossing, be sure the Romaine lettuce is dry and at room temp, and bring the dressing to room temp as well.

Mix a little bit at a time making sure to coat all the lettuce.

Of course if you like anchovies or anchovy paste surely add to the dressing mix, and a little dijon is lovely too.

My family doesn't like the above and we usually just have the dressing on lettuce. Every now and then I go to the extra trouble with the bacon and croutons.
