MOIST CHOCOLATE CAKE- FARM STYLE

This recipe is from one of those old farm community Women's Institute, or Church Guild cookbooks that were put together back in the 50's and 60's. It's a rich, hearty cake, always moist, nothing "light" about it. Really good stuff.

MOIST CHOCOLATE CAKE

1/2 c. butter or margarine
1/2 c. rolled oats
1 c. boiling water
1 1/2 c. brown sugar
2 eggs
1 c. all-purpose flour
1/4 c. cocoa powder
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Mix butter, rolled oats, and boiling water. Let stand until cool.
Cream together brown sugar and eggs. Sift together the dry ingredients, and add alternately with the egg and brown sugar mixture to the cooled oatmeal mixture. Add vanilla and mix all together.

Pour into 8x8 or 9" round cake pan. Bake in slow oven 325 degrees for 50 minutes.

Make 2 for a layer cake, top with your favourite chocolate or mocha frosting.
