Fruit-Bran Muffins, No dairy, Yummy

This is our favourite muffin recipe, always lovely and moist:

Banana Bran Muffins

1 3/4 cups all-purpose flour
1 1/4 cups bran (oat or wheat)
1 tablespoon ground cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice

2 eggs
1 cup orange juice
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup vegetable oil
1 cup mashed ripe bananas
1/2 cup chopped walnuts -optional

In a large bowl, combine all the dry ingredients.
In another bowl, beat the eggs, juice, sugars, and oil.
Stir into dry ingredients until just moistened. Fold in bananas and nuts.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Notes:
1. Original recipe called for 1 1/2C all-purpose flour, 1C oat bran, 1/2C whole wheat flour, but this works fine.

2. Can use grated carrot, zucchini, cranberries, applesauce, raisins, dates, or just about any fruit in place of the bananas.

3. Yes, you can add chocolate chips, try 1/2 cup.

4. Oat bran makes heavier muffins. Wheat bran makes lighter muffins. Try and see which you prefer. The basic recipe is flexible, and I've thrown away all my other bran muffin recipes.
