Emeril's Essence Creole Seasoning

Emeril's Essence Creole Seasoning (also Referred To As
Bayou Blast):

Yield: 2/3 cup

This spice blend is great as a sprinkle or rub on beef, pork, chicken, seafood or veggies for the bbq!

Ingredients

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder (granulated garlic)
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1/2 tablespoon lemon pepper -or- 1/2 tablespoon dried lemon zest
1/2 tablespoon mustard powder (Keens, or Colmans)

I have bought Emeril's Essence at supermarkets in the U.S.
I've found that, like my mother, he left a couple of key ingredients out of the recipe he gives away, to keep you coming back. I have added them here.*

The simple instructions: combine all ingredients, store in a glass jar. But there is more to know...

If you have a mortar & pestle, use coarse sea salt, and put it in with the dried oregano and thyme, and lemon zest if you're using it. Crush the salt and herbs together until most of the salt is ground up and the herb leaf is almost powdered. Then mix that up with the other powdered ingredients.

Notes about ingredients:

1. Try smoked paprika.

2. Try smoked sea salt.

3. Try Kashmiri Chili Powder in place of the cayenne pepper- it has all the flavour with less harsh heat, if you like a more mellow blend.

4. Don't use cheap dollar-store lemon-pepper! Use at least Costco grade. or better still, real lemon zest.
Just Google (or Startpage) "oven dried lemon zest" and give it a go.

*Emeril leaves out the Lemon pepper/Lemon zest and the Mustard powder in his website recipe, but they are both in the commercially packaged version. They are essential to achieving the magic.
